Was sind Kohlenhydrate?

Aufgaben der Kohlenhydrate

Kohlenhydrate Verdauung
Die Verdauung von Kohlenhydrate beginnt bereits im Mund beim zerkauen der aufgenommenen Nahrung. Durch das im Speichel enthaltene Enzym Amylase wird bereits ein Teil der Kohlenhydrate im Körper zu kleinen Zuckermolekülen gespalten. Je besser die Nahrung gekaut wird, desto weniger Verdauungsarbeit müssen die restlichen Verdauungsorgane leisten. Die größeren Kohlenhydratketten werden so lange gespalten bis die kleinsten Bausteine (Monosaccharide oder auch Glukose) übrig bleiben. Über die Darmwand gelangen die kleinen Zuckermoleküle ins Blut aufgenommen. Sobald dies geschieht, steigt der Blutzuckerspiegel an und sendet Signale an das Gehirn weiter. Darauf wird das Hormon Insulin ausgeschüttet, wodurch die Nährstoffe in die Zellen transportiert werden. Gemeinsam mit den Aminosäuren und Fetten dienen sie den Zellen als Nährstoffe und fördern den Muskelaufbau.
Kohlenhydrate als Energiespender
Sobald einzelnen Zuckermoleküle in den Zellen angekommen sind, geht es mit dem sogenannten Citratcyclus weiter. Der Citratcyclus ist ein Stoffwechselprozess, bei dem aus der Glukose Energie in Form von ATP (Adenosintriphosphat), Kohlendioxid und Wasser entsteht. ATP wird bei jeder Muskelbewegung benötigt. Wird zu viel Zucker in Form von Kohlenhydraten über die Nahrung aufgenommen, werden damit die Glykogenspeicher (Energiespeicher) gefüllt. Je nach dem wie hoch der Bedarf ist, wird das Glykogen wieder in Glukose umgewandelt und so der Körper mit Energie versorgt (Gluconeogenese). Hat der Körper zu wenig Kohlenhydrate im Blut hat, kann er jederzeit auf diese Glykogenreserven zurück greifen.

In dem Moment, in dem die Schleusentore der Zellen durch Insulin geöffnet werden, wird die Fettverbrennung blockiert. In dieser Situation baut der Körper baut auf und nicht ab.
